Hearty Bean Soup

Yield: 12 servings

  • 1 medium onion chopped
  • 1/2 cup chopped celery
  • 1 - 15 ounce can of whole kernel corn, divided
  • 1 - 15 ounce can black beans, rinsed and drained
  • 1 - 15 ounce can tomato sauce
  • 1 - 14 ounce can diced tomatoes, undrained
  • 1/2 cup Cavena Nuda
  • 1 - 4 ounce can chopped green chillies (optional)
  • 1 tablespoon chilli powder
  • 3/4 teaspoon cumin
  • 3 cups cubed cooked chicken

Saute onion and celery in oil until tender in a large heavy pot. Add the rest of the ingredients except chicken and bring to a boil. Reduce heat, cover and simmer for 40 minutes. Stir in chicken and cook until Cavena Nuda is tender. Makes 12 servings.
