Chicken Stir Fry

Yield: 4 - 5 servings

  • 4 cups cooked Cavena Nuda
  • 3/4 pound boneless chicken breast, cubed
  • 4 tablespoons soy sauce, divided
  • 2 cloves of garlic, minced
  • 1 1/2 cups chopped broccoli
  • 3 green onions, sliced
  • 2 tablespoons vegetable oil, divided
  • 3 large carrots, shredded
  • 1/4 teaspoon pepper

To prepare Cavena Nuda, place 2 cups grain in a saucepan and cover with 3 1/2 cups water. Bring to boil, then turn down heat to medium and cook until just tender, 40 to 45 minutes.

Combine chicken, 1 tablespoon soy sauce and garlic in a bowl and set aside. In a large skillet stir fry broccoli and green onions in 1 tablespoon oil for 5 minutes. Add carrots and saute until tender-crisp, about 4 minutes. Set aside vegetable mixture and stir fry chicken in remaining oil in skillet until cooked. Add Cavena Nuda, vegetables mixture, remaining soy sauce and pepper and heat through. Makes 4 or 5 servings.
