Cavena Nuda Breaded Chicken with Bruschetta

Yield: 4 chicken breasts

Chicken:

  • 4 chicken breast, boneless, skinless
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup flour
  • 2 eggs
  • 1/2 cup bread crumbs
  • 1/2 cup Cavena Nuda, ground slightly
  • 1 tsp rosemary, finely chopped
  • 2 tbsp vegetable oil

Bruschetta:

  • 2 tomatoes, seeded, medium dice
  • 1 tbsp basil, finely chopped
  • 1 tsp sugar
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt to taste
  • Pepper to taste

Preheat oven to 350 F. Mix together all bruschetta ingredients and taste. Adjust seasoning if needed and allow to sit during preparation of chicken. Place flour in a bowl, add a 1/4 tsp of salt and a 1/4 of pepper and mix. Place eggs in a bowl, add a 1/4 tsp of salt and a 1/4 tsp of pepper and whisk. Place bread crumbs, Cavena Nuda, and chopped rosemary in a bowl and mix together. Lay chicken breasts on a plate and sprinkle both sides with salt and pepper. Take breast and dredge in flour, covering both sides completely. Take chicken out of flour and shake off excess.

Next, place chicken in egg wash. Coat both sides and place in breading mixture. Bread both sides of breast with Cavena Nuda mixture and place on a plate. When all four chicken breast are breaded, place large frying pan on medium high heat. Add in oil. Place breasts in pan and brown both sides. Add more oil to pan if necessary. Once chicken in browned place on a baking sheet and place in oven to finish cooking for 20 minutes. When chicken is cooked, place on plate and spoon bruschetta mixture over top and serve.
